Today I made some Piernickzi from a recipe that I had seen on Ren Behan‘s Fabulicious blog.
They are spiced Polish gingerbread biscuits that also work well as decorations and they are flavoured with ginger, cinnamon, mixed spice and all things nice.
It’s a lovely dough to work with and the recipe made 5 trays of aromatic festive little biscuits.
They should have delicate white icing, but I don’t really do delicate, so for the moment they are staying as they are, which is just fine with me.

I made Ren’s pierniczki recipe too for a gingerbread decorating session round at my house last weekend as well as my tried and tested traditional one. I think you need a bit of icing to set off the slightly dusky taste. ‘don’t do delicate’ your creations are a lot more beautiful than mine were!

These look great and am now wishing I’d put a hole in the middle of mine too, so they would at least have the potential to be used as decorations.. I’m not os good at intricate either and left mine plain.

Hi Claire, these look wonderful! I’m so pleased you tried them, the photos are beautiful, I love the blue wooden background, it really sets them off.
On some of mine, I used a snowflake cutter and added some ready roll cut out snowflakes on some of them rather than icing them all, so that’s a good alternative. I don’t beleive that you don’t do delicate!!
