This Raspberry Coconut Ice from Dan Lepard tastes good, it's pretty, easy to make and you don't need to cook it. I like that it's kind of retro too.

Oh, I almost forgot. Here is my vague nod towards Easter chocolatiness. Fresh popcorn, drizzled with melted white chocolate, sprinkled with ‘hundreds and thousands’, a pinch of salt and Cadbury’s mini eggs. Good for Easter weekend movie viewing. Happy Easter.
