We do like a fruity loaf. I made up this recipe on the hoof but it worked out just right for Sunday breakfast.

Oh really...more oven baked pancakes? I know, I know, but this one is another winner. I promise. It's a good way to turn a crisp green apple into a decadent dessert for two or a greedy breakfast for one. What's not to like?
